Apricot
Char Kway
Silky rice noodles, blistered greens, sweet heat, and a smoky finish.

Apricot Verge cooks the kind of hawker food that makes you pause mid-conversation: smoky at the edges, sharp with pickle, and gone before it gets cold.
We started with one wok, a stack of chipped bowls, and an unreasonable interest in the perfect edge of a noodle. Apricot Verge is our answer to a simple question: how much flavour can fit on one small tray?
Everything gets a little contrast: hot with cool, crisp with soft, rich with something bright enough to wake it up. No theatre. Just good timing and a ladle that knows when to stop.

We serve until the tray runs out. If a favourite disappears, take it as a sign to try the next thing.
